Vietnamese Pork

Ingredients
- 1/2 stalk lemongrass
- 1/2 tbsp shallot, chopped
- 1/2 tbsp garlic, chopped
- 1/8 tsp black pepper, ground
- 1 tbsp honey
- 3/4 tsp dark soy
- 3/4 tbsp fish sauce
- 2 tbsp rapeseed oil
- 300 g pork, in stir-fry strips Boneless shoulder
- 60 g tenderstem broccoli tips, cooked
Instructions
Marinade
- 1/2 stalk lemongrass, 1/2 tbsp shallot, chopped, 1/2 tbsp garlic, choppedSeparately mince the lemongrass, shallot and garlic, and mix together in a bowl.
- 1/8 tsp black pepper, ground, 1 tbsp honey, 3/4 tsp dark soy, 3/4 tbsp fish sauceAdd the remaining marinade ingredients and mix to a smooth texture.
Pork
- 300 g pork, in stir-fry stripsCoat the pork strips well with the marinade. Set aside at room temperature for 30 mins.
- 2 tbsp rapeseed oilHeat the oil to high and stir-fry the marinaded pork for 10 minutes until cooked through.
- 60 g tenderstem broccoli tips, cookedAdd the broccoli and warm through.
